When inspiration strikes you at the grocery store,

I suggest you follow through. Yesterday I saw kumquats in the produce section and decided I wanted to make a yummy drink with them before the season ends. I then remembered my sweet friend Eva gave me vintage Moscow Mule glasses that I had yet to enjoy, so a twist on a Moscow Mule it was! Now, the Moscow Mule tends to be on the sweeter side and as someone who likes more balanced flavors I love the version I'm sharing with you today. The rosemary infused simple syrup adds an earthy flavor which counters the sweetness of the ginger beer and the bitterness of the kumquats. I also chose a spicy ginger beer by Maine Root Company because it adds more character and depth. If you're looking for something a little different, this is the one for you!

Some substitutions:

If spice isn't your thing, regular ginger beer will substitute just fine.

This drink can be made non-alcoholic. Just omit the vodka and keep everything else the same.

Make your own simple syrup. I get the temptation of buying it pre-made, but trust me when I say leave it behind. It's expensive and doesn't really save you any time.

If you want to make this for a group, I'd probably pre-mix the vodka with the kumquats and rosemary simple syrup, then have everyone individually add the ginger beer to taste. This will keep the ginger beer from getting flat and the ice from diluting the drink.

Enjoy it friends!
