When Kristen and I sat down to plan our collaboration, we put all of our ideas out on the table, and quickly realized that the point of every single aspect of our work together is to bring community together. Whether it’s in the way we celebrate the labor of love of bringing two creative entrepreneurs together, or the way our customers use these wares and recipes. No matter what, we want people to join and celebrate life.

I created this herby whipped feta because I love an easy spread. This recipe can be used on its own, as an accompaniment to a cheese board or as wine happy hour snack. Or, it can be used as the base to a Greek salad or spread over toast and made into a sandwich.

Herby Whipped Feta

 
INSTRUCTIONS
  1. Outfit your standing mixer with the whisk attachment. Break the block of feta into chunks and place into the mixer’s bowl. Add ¼ cup of olive oil and cover the entire mixer with a clean kitchen towel to prevent any feta from flying out of the bowl. Turn the mixer on to low speed and slowly increase to medium-high speed. Once the feta starts to break down, and no longer bounces out, go ahead and remove the towel and increase the mixer’s speed to high. Add a tablespoon more of olive oil if needed, and whip for about 5-7 minutes.

  2. Once the feta is fluffy, add the chopped herbs and mix to combine. If the flavor needs some brightening, add a tiny amount of lemon juice, careful not to add too much as it will amplify the saltiness of the feta. Serve in a Campfire Pottery x Bravo Jenny pasta bowl and garnish with the remaining 1-2 tablespoons of olive oil. Enjoy!

 
INGREDIENTS

1 lb. block of feta cheese packed in brine, drained
1/4 c. + 2 tbsp. extra virgin olive oil
5 basil leaves, chopped
8 small sprigs of parsley, chopped
6 chives, chopped
4 mint leaves, chopped
3 garlic scapes, chopped
Optional: ½ tsp. lemon juice
